Chicken Ranch Pasta Salad

21 Day Fix Chicken Ranch Pasta Salad-5794 I recently became interested in the 21 Day Fix eating plan.  It’s all about clean eating and portion control.  What I found out about myself was, that even though I’m a big vegetable lover, I still was not eating enough of them per day.  I also love potatoes…of any kind, cooked any way.  Add to that, eating bread or pasta, or corn, and I realized that I do eat a lot of carbs in a day. I started the 21 Day Plan a couple of weeks ago and in the first week, I did lose 5 pounds.  I think it had a lot to do with watching the carbs and making sure to get all the protein and vegetables in a day. What I like about clean eating is that I really do feel better.  I don’t get bloated after eating.  I love working with fresh fruits and veggies and my favorite store is Sprout’s Farmer’s Market.  I’ll be glad when they put one here in Cheyenne. Ok, anyway…on to the recipe. Ingredients:

  • 1 Red container of grilled chicken
  • 1 Green container of fresh lettuce, tomatoes, green onions, (or salad veggies of your choice)
  • 1 Yellow container of cooked whole wheat pasta
  • 1 Orange container of homemade ranch dressing
  • 1/2 Blue container of cheese

I grilled my chicken on my new OptiGrill.  (Oh I love it. It cooks to perfection every time)   Season the chicken with some garlic and herb salt free seasoning.  Chopp your veggies.   Add your dressing and cheese and mix it all together and enjoy. I made homemade Ranch dressing using the store bought mix and using milk and mayo.  I tried the homemade ranch mix and used Greek yogurt for clean eating veggie dip, but I didn’t particularly care for it.  But then I don’t like Greek yogurt.  I may try the mix again for the dressing. For the 21 Day Plan this equals:

  • 1 Red
  • 1 Green
  • 1 Yellow
  • 1 Orange
  • 1/2 Blue
